Menu Planning Monday: Vacation week!!

posted in: Simply Home | 4

Last week I showed you the cost for a couple of my recipes: Tomato Basil Pasta Salad and Crockpot Baked Potato Soup.

This week I have two more!! First up, our Braised Chicken Gumbo, which only costs $3.04 (plus the cost of brown rice) to make the meal!

Last week I also made  Bean & Cheese Freezer Burritos. Since I made up a bunch, the total came to $22.09, but it only costs $0.74 per burrito! (If you want to cut the cost even more, you probably could put less cheese in it.)

Menu Plan

This week’s menu plan is a little different. We will be on vacation, so we don’t necessarily have set days in which we are making these meals.

Summer Goals in review

I’ve checked a few more things off my list!! (Since I’m going on vacation this week, I’m just going to post what I’ve accomplished last week. You can see my summer list here.)

Home Management Goals

9. Hang shelves in basement. – Yay!! We’ve accomplished this goal and I’ll post about it tomorrow!

10. Have a garage sale. – It went pretty well and we cleared a LOT out of our house – whew!

11. Compile a list of favorite recipes and calculate the cost for each recipe. – I’m doing that as I go through this month’s meals! So far, so good!

12. Weekly freezer cooking. – Made DIY Yogurt, Healthy Granola, and I Cooked my own Beans for the freezer.

Blogging/Business Goals

20. Advertise sponsors. – Yes, and I have my first sponsors set up. Let me know if you are interested!

I really like the breakdown with the cost of each meal! It really does help in planning. I’m also wanting to cook all my beans and freeze them instead of buying canned. I did some black beans recently but I think I needed to cook them longer. I’ll try your crock pot method next time. Also, I love the pic of your bread. I’m making our bread too, but am finding I need a bigger mixer. Trying to find a used affordable machine. 🙂

    • Thanks – I’m going to try to keep showing you the cost of each meal as I can. Eventually I’ll have all my favorite dishes calculated, then I can better know how much I will spend up front on meals. Thanks so much for visiting and commenting!!

  2. I’m stopping by for a visit from Organizing Junkie today.
It’s another 107 degree day in Las Vegas. Man! Am I looking forward to cooler temps. Unfortunately, we don’t usually start cooling down till late September or October.
Your menu for the week sounds delicious! The chicken gumbo sounds wonderful. I’ll have to bookmark that one.

    • I’m so glad you stopped by again and commented, Rona. It’s good to hear from you. Yes, we have also been having 105 plus weather!! The summer has NOT been the mild one I was hoping. The gumbo is one of our favorites. 🙂
