One of our favorite meals last week was a salad we cooked up on the spur of the moment. We had extra zucchini on hand and my husband suggested we grill them. (Ever since acquiring a gas grill, we’ve been using it more!) So we grilled the zucchini and red onion. Simple, but it was so good!!
Lunch: Light & Fresh Vegetable Soup & Sandwich:
– 2 slices whole-wheat bread, 4 slices deli-thin lean smoked turkey breast, 2 pieces lettuce, 3 slices tomato, 1 Tbl. alfalfa sprouts, 1 oz. reduced-fat Cheddar cheese, 2 tsp. mustard
Dinner: Chili & Salad
Lunch: Baked Potato with Broccoli & cheese & Spinach Salad
Dinner: Spaghetti & Bread
Dinner: BBQ Yardbird Pizza (recipe next week!)
Lunch: Tuscan Tomato Bread Soup & Sandwich:
Dinner: Wine & Tomato Braised Chicken
