Menu Planning Monday: Week of 8/29 + Homemade Waffles

After checking the grocery ads this week, there didn’t seem to be a lot of great deals. So, I made a list of my pantry and frozen items. (Which besides 10 lbs. of beef, homemade waffles, and frozen veggies I didn’t have too much in my freezer. We also had a ton of cold cereal and oatmeal.) Time to shop!! (We went to CostCo and Checkers)


Monday – Chili (haven’t decided what recipe yet, but I’m using leftover taco meat from last Wed. add a recipe in the comments section if you have a good one!!)
Tuesday – Tomato Basil Pasta Salad (had to make again, especially since tomatoes are on sale at Checkers)

Wednesday – Dinner at the Morsches’ again. (This will be a weekly International Students’ Ministry we will be involved in.) I am bringing salad and dressing.

Thursday – leftovers

Friday – Taco Chicken Bowls (from Budget Bytes)

Saturday – wedding

Sunday – Tomato, Mozzarella, and Basil Panini


Turkey Patrami Sandwich (my husband loves swiss cheese!)


cereal (I have been adding peaches to my cereal most of the time)
yogurt parfait (with fresh fruit)
Huevos Rancheros from Eating Well (but not doing it with green sauce)
Homemade Whole Wheat Berry Waffles (see recipe below)

Homemade Whole Wheat Berry Waffles

(made 26 squares for me)

2 c. all-purpose flour
2 c. whole wheat flour
1/4 c. granulated sugar
2 Tbl. baking powder
2 tsp. salt (I used a little less)
4 large eggs, lightly beaten
3 1/2 c. reduced-fat milk (I used milk that was expired)
3/4 c. unsalted butter, melted
2 tsp. vanilla extract
1 1/2 c. blueberries, fresh or frozen (I used frozen blackberries I had on hand)
2 tsp. orange zest (unfortunately, I didn’t have any oranges…)
